Thanks to the food co-op again: I found myself with an avocado and two grapefruits. Pantouflar does not eat grapefruit, and two are too much for me alone. Our landlords are coming over for dinner tonight, so I modified a recipe that I found on the internet. You will need:
The juice of two grapefruits
a glass og orange juice
Two cans of red salmon
1 avocado cut into pieces
Gelatine- enough to set a pint
lots of coriander leaves
balsamic vinegar
Set the grapefruit+ orange juice with the gelatine. Arrange small bowls with the fruit gelatine, salmon, avocado and coariander leaves. Serve scattered with coriander leaves and some balsamic vinegar.
Tasty and light
